Pumpkin Juice

This pumpkin juice recipe is perfect for autumn, but it’s just as tasty year-round! Raw pumpkin juice can help boost immunity, and it’s great for weight loss. Other pumpkin juice benefits include beta-carotene, vitamin A, and vitamin C, which are important for healthy skin.

Ingredients

  • 4 gala apples
  • 3 Granny Smith apples
  • 1 pumpkin
  • 1 inch ginger 
  • Pinch of cinnamon (optional)

Serves 3.

Directions

  1. Cut off the stem of the pumpkin and cut in half. Scoop out the seeds and insides and cut into large chunks.
  2. Juice the ingredients one piece at a time. Alternate between hard and soft ingredients for best results.
  3. Add cinnamon to the juice and stir. 
  4. Pour into glasses. Serve chilled.

Tip

Save the pumpkin seeds to make an easy, fiber-rich snack! Rinse the seeds and lightly coat with oil and salt. Roast in the oven at 350℉ until golden and crispy.
